Eggs’n’Coco – Breakfast Smoothie

This is a simple, quick recipe for a nutritious breakfast smoothie that’s sure to fuel you up for the morning!

We just bought a Vitamix pro series 750 blender so I’m liquefying everything around me these days, it’s way too much fun! ūüėä

This recipe came out of a want to eat eggs for breakfast for my protein and fats (and not use protein powder or a meal replacement) but I didn’t feel like cooking the eggs, not even boiling them (which is usually my healthier go to option). I just wanted it done quick without having to wait 10 min for them to boil or cook, so I looked at my vitamix and said to myself,

“Blend the eggs!”

I’m sure if I google “egg smoothies” I’ll see a million recipes but it was a revolutionary thought to me, so I concocted this recipe using  raw eggs and other tasty ingredients in my kitchen and the results are A+

Eggs’n’Coco – Breakfast Smoothie

  • 2 Organic free range brown eggs
  • 3 cups organic raw milk
  • 1 organic banana
  • 1 tbsp organic unrefined coconut oil
  • 1 tbsp organic almond butter
  • 1 tsp organic bourbon vanilla
  • 1 tbsp organic cacao powder
  • 1 tsp organic cacao nibs

Add milk to vitamix, then add eggs, coconut oil almond butter, vanilla, cacao powder and nibs, adding the banana last.  Blend starting at position 1 and slowly moving up to 10 (5 seconds time), holding at 10 for 15 seconds.

Drink immediately.

You don’t want to blend for too long because the vitamix powerful 2 horsepower motor can heat things up, and you don’t want to cook any of your raw ingredients and lose their optimal benefits.

Yes, this recipe calls for using and drinking raw eggs. You should only do this if you feel comfortable with raw food, and raw eggs. I grew up in Romania on a farm so not many things make me squirm, eggs were super fresh (we had chickens) and I’ve eaten my fair share of odd dishes (cold head cheese anyone?) I recall my dad telling me how his uncle taught him to drink the eggs raw, because he said it was the best way to eat the eggs and assimilate all the nutrients. He taught my dad to poke a hole in the egg bottom using a tiny sewing needle and then slowly suck the egg out. I guess that keeps kids from being grossed out by the look or texture of the raw egg?

This receipe is definitely not as colorful as that one, but it’s way tastier and I think you’ll love it just a little more! It’s tastes like a delicious meal replacement smoothie without the heaviness of it, it goes down smooth and the vitamix pulverizes any texture the eggs and cacao nibs might once have had so it’s all homogenous in texture and delicious. You get your healthy protein and fats in perfect ratio from the eggs plus the added good fats from coconut oil and almond butter will give you extra energy. Cacao will give your body a healthy tiny amount of caffeine boost too ūüėČ

Additional Ingredients

  • 1 cup Cold coffee
  • 1/4 tsp Cinnamon power
  • 1 tsp Acai berries
  • 4 Dates
  • 1 tbsp Maca powder

I have no doubt adding these ingredients will taste great and come in handy if you want to increase the serving size of your eggs’n’coco smoothie or want to add an extra boost of mineral and vitamin rich sweetness or a touch more caffeine kick. After all it is a breakfast smoothie. And what’s breakfast without a cup of coffee?

Cherry Pie Recipe – Sugar-Free and Oh So Good!!

It’s my third month into a Sugar-Free cleanse – that means 3 more months to go!! Woo HOO!! This halfway mark deserves a treat! And what better, tastier treat than a cherry pie, homemade with all the goodness of my pantry! It will make the house smell amazing, and I’ll have a guilt free treat perfect for summer!!

Join me in making this sugar-free pie and usher in a new level of healthy deserts for yourself, your family and your friends!! Share this recipe and post your comments, alterations or tips you have below!!

3 cups whole wheat pastry flour
2 sticks cold, unsalted butter
1 tablespoon sea salt
5 tablespoons maple syrup
4-6 tablespoons cold water

1 lb Rainier cherries, or sour cherries of any kind, sliced in half and pitted (the deep red ones are the tastiest, make sure you wash them well with fruit and veggie wash before pitting them – un-organic fruit gets a heavy does of pesticides year round that you don’t want to partake of!)
2 tsp Lemon Juice
1 tbsp honey
1 1/2 tbsp flour

Extra honey on hand

Preheat oven for 425F.

Make crust the exact same way as you would my apple pie. (Refer to instructions here) Place dough in fridge for 30 min while you wash, pit, and mix up the cherries with flour, lemon juice and honey. Let the chery mixture stand for at least 5 min before using in the pie.

Take out the dough and roll half of it using a floured rolling pin into a large circle, pace gently on pie shell. Scoop out cherry mixture and place it all in the center, dribbling 1-2tbsp more honey in between handful of cherries. You should have used 3 tbsp honey by the time the mixture is in the pie. Any more might make the pie too sweet as honey has a powerful taste. Add 2 tbsp of butter (or coconut oil) cut up into tiny cubes over the top of the cherry pie filling.

Roll out the remaining dough into a circle and cut into thin ribbons with which to make a lattice for the pie. Braid lattice over the pie and seal the ends with any extra remaining dough. Brush egg white over the dough, or if you are vegan, brush coconut oil over the dough.

Bake for 40 min, checking the pie as early as 20 min in to ensure your oven is not cooking it too fast and the crust is burning too quickly. Lower heat if your oven is too intense and cook for a little longer, trying to reach at least 30-35min.

Home Made Apple Pie – Sugar-Free, Delicious, and Perfect for the Holidays!

This Memorial Day I decided to bake an all natural sugar-free apple pie! This is my second month of no-sugar (as an ingredient) and I’ve started really craving deserts. I’ve had to find other healthier ways to fulfill that craving and that’s what lifestyle changes are all about. If you’re trying to ditch the processed-sugar-denatured-high-carb-junk and you want a real treat for your body you will have to make this apple pie! You won’t regret it, and you won’t believe it’s sugar-free!!

Here’s the recipe followed by lots of step-by-step pics to keep u on track!

3 cups whole wheat pastry flour
2 sticks cold, unsalted butter
1 tablespoon sea salt
5 tablespoons maple syrup
4-6 tablespoons cold water

6 large granny smith apples
Juice from 1 lemon
1/4 cup whole wheat pastry flour
3/4 cup maple syrup
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1 vanilla bean
1 tablespoon melted butter

Wash and peel then slice apples into even pieces and toss with lemon juice and flour. In a small pot, combine maple syrup, cinnamon, nutmeg, and cloves. Split the vanilla bean in half and scrape out the vanilla into the pot as well. Heat over low until the warm and starting to bubble around the edges, whisking occasionally. Pour over apples and toss until apples are coated. Let sit for one hour (or overnight is better!)

To make crust, combine the flour and salt into a bowl and cut in butter with your fingers (or use a food processor) Once butter are broken down to the size of peas, add maple syrup and 1 tablespoon of water at a time to the mix, stir/kneading until the dough comes together, working dough as little as possible. Dump dough onto a flour covered surface and divide into two pieces. Form pieces into disc, wrap in plastic, and place in refrigerator for 20 minutes to chill.

Roll one piece of dough into a large circle, enough to cover a 9″ pie pan with crust hanging over.

Preheat oven to 375ňö.

Pour filling into the pie pan. Roll out the second pie crust and cut into strips (if wanting) or place the crust on top whole. Add remaining dough to edges, crimp the edges and cut slits in the top if using the crust as a whole. Brush crust with melted butter, also egg whites work well.

Bake for 45-55 minutes or until the top has browned and the apple filling in bubbling out the sides. Let cool before serving.

All things Golden Smoothie! – a delicious treat for a hot day!

It’s become really hot here in Los Angeles. Where I am in Marina del Rey it’s a little more bearable, but let’s just say that the fan hasn’t stopped working thins last week ūüėČ

So to celebrate this massive heat wave and the golden sun I have created a new recipe I lovingly refer to as
All things Golden Smoothie ūüôā

It doesn’t actually combine all yellow fruits and veggies under the sun (pardon the pun)
– (pardon the rhyme!)
It combines my favorite raw golden treats!

– First I start by brewing up some hot water for a large cup of Yerba Mate tea. I put about two tablespoons worth of loose leaf Yerba mate in a cup and pour the water over, letting it steep until it’s no longer hot.
– I add 1 tsp of raw organic local honey and stir until it’s dissolved
– I pour the sweetened tea into my bullet blender
– I add two cups worth of cubed pineapple, fresh. (It’s way more flavorful if you use fresh pineapple versus the frozen variety.)
– I add a whole ripe organic mango, cubed.
– finally I top it off with a heaping tbsp of organic local bee pollen
– and 4 deliciously refreshing ice cubes

Blend till everything is homogenized, and the texture should be creamy. This will ensure that the pollen has broken down to its tiniest form for easy absorption.

And then I kick back and enjoy! And I hope you will too!

To your health,
Irina ūüôā

It’s called Tropical Traditions and they are a family based company that works in the Philippines with the local farmers to produce and deliver quality virgin, organic and expeller-pressed coconut oils. I highly¬†recommend¬†that if you are going to start replacing everything in your house with coconut oil, like me! hehe, that you buy it in bulk! It can save a lot of money – compare $1.50 per ounce for a regular 15oz bottle of coconut oil to $0.50 per ounce for a gallon of expeller pressed organic coconut oil! Why wouldn’t you want to save some money? ¬†Oh, and they also have deals going on every month, like free ground shipping for US orders!!

My Favorite Juices – the top 4 and how to make them!!

Are you feeling it? It seems like everyone is going on a juice cleanse these days, and it’s no wonder! The benefits of a juice cleanse are huge, and it’s so refreshing and easy on your body! You feel so alive, and have such a steady stream of energy all day long with no drops in mood, I think everyone needs to try this at least once a year, and I have written a great article called The Organic Raw Juice Cleanse: why you should regularly do it!¬† about the benefits of juicing, important information and solid TIPS about starting a juice and the things you NEED to know before starting.

These are some of my favorite recipes. They are my go-to juices. Everything that I juice is organic, as much as available, and I highly recommend you do the same.  Pesticides and toxins found on conventional food does not have a place in your body!! This juice is easily assimilated into the bloodstream so make sure you are buying good ingredients to boost your immune system!

Easy and yummy, the carrots make it extra milky!!

3 apples ¬†–(with skin)
1 beet with its leaves
A handful of spinach ¬†–(with its stems)
8 carrots ¬†–(with its skin)

The Classic

Great for a pick me up. I love to drink this fresh first thing in the morning!! Get’s me wide awake, and revitalized, ready to take on the day!

3 green apples ¬†–( cut this into pieces so that it fits in your juicer, keep the skin on)
1 green pear ¬†–(with the skin)
2 kiwi ¬†–(take the fuzzy skin off it)
1 lime ¬†–(take the peel off it, and quarter it)
A handful of spinach ¬†–(with the stems)
A handful of parsley ¬†–(with the stems)
A bit of cilantro ¬†–(with the stems)
3 stalks of celery ¬†–(with the leaves)
A thumb sized piece of ginger ¬†–(peel the skin off)

Green Zing!!

This tastes so good, if you use half a jalape√Īo like me it’s a little hot and spicy, tastes like a Cesar, or a Bloody Mary. It’s basically a spicy juiced salad, and it does the trick when you are craving mexican food ūüėČ

4 tomatoes or a pint of cherry tomatoes¬† –(cut in small pieces)

4 carrots ¬†–(with their skin)

6 celery sticks ¬† –(with its leaves)

2 lemons ¬†–(take the peel off, then cut the fruit to fit)

Half a beet ¬† –(just the root)

A handful of spinach ¬† –(with the stems)

A handful of cilantro ¬† –(with the stems)

if you don’t mind the breath add 2 cloves of garlic ¬†–(peel the garlic)

Half of a jalape√Īo pepper (with the seeds is fine)

Juice everything together up to this point and then add to the final juice  1 tablespoon of flax oil or omega 3.6.9 oil, really good olive oil or norwegian cod liver oil, 1 tablespoon raw honey, and then mix in salt and pepper to taste.

VOILA! You have made spicy green tomato!

Spicy Green Tomato

Cantaloupe is a great fruit to juice, and it’s best to juice it with its skin if you can find it organic. Otherwise you have to make sure to wash its skin really, really well, as it will have pesticides, and herbicides, and larvicides, and etc… it’s gross, and you don’t want it. It has no place in your healthy body! So wash it well with a fruit wash! You can make your own by mixing equal parts water and white vinegar and a bit of baking soda, or a few drops of essential oil from orange so that it takes the smell of vinegar down a bit. Soap will do too, it’s just not going to be as good as a proper fruit wash. If you rather would not juice the skin, then just cut the cantaloupe off the skin, and juice away!

Juice half a cantaloupe, pour into a nice big glass, and add a dash of cinnamon to it.

ENJOY!! This is¬†definitely¬†a desert like drink, it’s refreshing and sweet and packed with vitamins!!

See this article for more on Cantaloupe Рthis will be really inspiring information!

Cantaloupe Heaven

You might want to add these to your juice!!

To the 1st and 3rd¬†juice¬†I sometimes add a whole raw egg. Then I just blend it really well with a Fork. It’s a good way to get your protein and all the perfectly balanced nutrients that are found in eggs. But you can’t be¬†squeamish about it, raw egg texture is a little different ūüėČ to say the least. If you have doubts about it, don’t do it. I don’t want anyone to become sick! If anything ever tastes strange or smells funny, don’t eat it!

I like to add Organic Flax Seed oil or Norwegian Cod Liver oil to my juices to make sure that I am getting my Omega 3 fatty acids.

Bee pollen is also an amazing addition to any juice, but it works best if you are blending a juice, such as pineapple, mango and bee pollen.

Happy Juicing Everyone! I hope you will have a delicious and fun experience, and feel free to get creative with your ingredients!

With love, and to your health

The Organic Raw Juice Cleanse: why you should regularly do it!

Why doing a raw, organic juice cleanse is so important :

Our bodies are bombarded everyday by toxins (The top ten are asbestos, chlorine, chloroform, dioxins, heavy metals, mold and other fungal toxins, PCBS, pesticides, phthalates, and VOCs. ) processed foods, sugar, “natural flavors”, food colors and much more. ¬†Over time this build up starts to accumulate, and your body has a harder and harder time of fighting it off.

Disease in America is epidemic. This year 35 percent of all deaths will be due to cardiovascular disease. At least one in four deaths are from cancer. Every single day, just under 8000 people die from disease, which adds up to more American deaths annually than occurred during the entire Vietnam war. Over 4 million women are considered to be infertile. Depression, ADD, chronic fatigue syndrome, PMS and fibromyalgia affect 70 percent of American women over the age of 17. And obesity? Among Americans 20 years old and older, 145 million are overweight or obese!! The reality is that being overweight contributes to over 60 diseases. And an alarming statistic is that a significant cause of death in America is from adverse reactions to medications that were properly prescribed and taken correctly. YIKES!

So it’s not that surprising that people are becoming more attuned to their own bodies and are beginning to seek answers outside the sphere of modern medicine. Personally, I don’t have a bone to pick with doctors, or nurses. They have hard, stressful jobs and work really long hours. But I feel that because they don’t have a thorough background in nutrition they place little value on food and it’s role in health and healing.

And most people don’t even give any real thought to what they are actually eating when they are out getting some fast food or cruising the grocery isles for their fix of overly processed, denatured food devoid of most essential nutrients. A lack of nutritional education and this modern diet is wrecking havoc on our health!

We are what we eat, digest and assimilate. There’s no doubt that we should be eating better (more on that later in a follow-up article) Enjoying foods in their fresh, raw state is¬†the¬†best way to digest and assimilate the most nutrients possible. And that means buying organic produce (conventional produce is bombarded with pesticides, herbicides, larvicides, fungicides, and chemical fertilizers, and sometimes it’s not even grown in real good soil, but in wood mulch and water! What nutrients are you getting from that?? Nothing! That’s why most conventional produce doesn’t taste like much.) Aside from eating organic, fresh, raw foods, the next best thing is to juicing or blending organic, fresh, raw foods. Even the most compromised, sickly, nutrient deficient body can greatly benefit from drinking juiced and blended raw foods.

Now we are getting into the juicing part of the article, ( I had to say a little about why this is so important first! ) so thank you for sticking around.

Here are some tips for a successful juicing experience:

1) As we said before, Organic is key when it comes to raw fresh juices that will provide optimal nutrients and will not add any more chemicals to your body. Shop for Organic produce as much as possible.

2) A good juicer goes a long way. Our juicer is the Omega 8006 Nutrition Center Juicer, and while it is a bit pricey, it’s the best juicer investment you will make. It’s slow, cold press method extracts the most nutrients because none get ‘burnt out’ high speed. It will give you lots of juice, and the pulp will come out in a separate container, and it will be pretty dry, which means you got the most juice out of your produce! It’s also soooo easy to clean (less than 3 min) and that is great news especially if you have a busy lifestyle, have to run to work, or have kids!

3) Buy a large amount of organic produce when you are at the store so that you don’t have to go back daily! This will save you lots of time. I’ll be including my top 3 favorite juice recipes in a follow-up article, and you can use that to calculate how much produce you would probably be buying if you wanted to make these juices every day for 3-5 days, maybe even 7!¬†¬†It looks like a lot of food when you are getting 10 tomatoes, 2 bunches of spinach, a bag of oranges, a bag of apples, two 5lb bags of carrots, etc… but it goes fast!! And it might seem like a lot of money at the time (my regular bill was around $70 for all Organic produce, but it is 110% worth it! When you do the math, it’s about 5$ for the best, freshest organic meal ever!! That’s actually cheap!

4) If you have to buy something that is not organic, wash it well with a fruit wash like an¬†all natural veggie wash¬†that you can get for a few dollars at your local Whole Foods, Trader Joe’s, Sprouts, and other health food stores. When you get home with your produce, if you have time, wash it right away with the veggie wash and rinse well, then store it in the fridge if it needs it. This will also save you lots of time later.

5) Before you begin juicing in the morning, make sure you drink at least 32 ounces of pure, alkaline water with a little lemon to flush your system and help you wake up.

6) You must consume your fresh juice immediately after extracting it!! Once the skin of your fruits or veggies is broken, oxidation begins and the food starts losing nutritional value. Since you desperately need those active, living enzymes in order to rejuvenate and repair your body, you need to heed this tip and drink your juice right after you make it.

7) A juice cleanse is composed of 4 parts – You need to drink your 32 ounces of water, followed by a 32 ounce breakfast juice, a 32 ounce lunch juice, and a 32 ounce dinner juice. If you have to juice all your juices in the morning, please keep them refrigerated until you need to drink them. This will help preserve valuable nutrients.

Now I’m going to share from my personal juicing experience. The first day that me and my husband did the cleanse we had a pretty intense headache by the end of the night. Mine was moderate, but my husbands was so bad that he had to lie down, and I gave him a short head and face massage that soothed him and he was finally able to sleep.

Why did this occur? It’s called a Herxheimer reaction, or the “die-off” effect that many people¬†experience¬†when they dramatically improve their diet. ¬†It’s an allergic response to the toxic by-products that are produced when your body’s pH changes for the better. This causes large numbers of pathological organisms, like harmful bacteria and yeast organisms, to die and exit the body.¬† So the sum total effect of this reaction is a temporary worsening of symptoms. But in reality, this is good news! It means that you are responding positively to your treatment, and significant improvement should shortly follow. We felt 100 percent better the second day, and every day after on the juice cleanse.

We also decided to add to the juice cleanse a natural, organic meal replacement shake with protein ( because we wanted to make sure that we were getting our body’s protein needs and not becoming deficient) and we also added the eating of one raw avocado with a little lime, salt and pepper. When you are chewing food, your mouth produces certain enzymes through your saliva that are also greatly beneficial to your digestion.

We did this for 5 consecutive days, and we felt our energy level stay constant throughout the day, with no drops, and our mood was always very even, not overly hyper or excited, nor mellow and down. We felt JUST RIGHT!! Not only were those changes noticeable  but we lost a little bit of winter weight too! Our skin started to feel softer, and we started looking at food differently. We craved more healthy food and less junk food then ever before!

The organic, raw, fresh juice cleanse has not only changed our bodies and our emotions but also our mindset towards food!

I hope that has shed some light on the importance of doing a good juice cleanse at least once a year, and hopefully adding one fresh juice every day into your meal plan. Don’t overlook this powerful tool for keeping you and your loved ones healthy! Your body will thank you for it and you will not regret it!!

Have a great day and talk to you soon!
