Eggs’n’Coco – Breakfast Smoothie

This is a simple, quick recipe for a nutritious breakfast smoothie that’s sure to fuel you up for the morning! 

We just bought a Vitamix pro series 750 blender so I’m liquefying everything around me these days, it’s way too much fun! 😊

 This recipe came out of a want to eat eggs for breakfast for my protein and fats (and not use protein powder or a meal replacement) but I didn’t feel like cooking the eggs, not even boiling them (which is usually my healthier go to option). I just wanted it done quick without having to wait 10 min for them to boil or cook, so I looked at my vitamix and said to myself,

“Blend the eggs!”

I’m sure if I google “egg smoothies” I’ll see a million recipes but it was a revolutionary thought to me, so I concocted this recipe using  raw eggs and other tasty ingredients in my kitchen and the results are A+

Eggs’n’Coco – Breakfast Smoothie

  • 2 Organic free range brown eggs 
  • 3 cups organic raw milk 
  • 1 organic banana 
  • 1 tbsp organic unrefined coconut oil
  • 1 tbsp organic almond butter 
  • 1 tsp organic bourbon vanilla 
  • 1 tbsp organic cacao powder
  • 1 tsp organic cacao nibs

Steps:

Add milk to vitamix, then add eggs, coconut oil almond butter, vanilla, cacao powder and nibs, adding the banana last.  Blend starting at position 1 and slowly moving up to 10 (5 seconds time), holding at 10 for 15 seconds. 

Drink immediately. 

Tips:
You don’t want to blend for too long because the vitamix powerful 2 horsepower motor can heat things up, and you don’t want to cook any of your raw ingredients and lose their optimal benefits. 

Yes, this recipe calls for using and drinking raw eggs. You should only do this if you feel comfortable with raw food, and raw eggs. I grew up in Romania on a farm so not many things make me squirm, eggs were super fresh (we had chickens) and I’ve eaten my fair share of odd dishes (cold head cheese anyone?) I recall my dad telling me how his uncle taught him to drink the eggs raw, because he said it was the best way to eat the eggs and assimilate all the nutrients. He taught my dad to poke a hole in the egg bottom using a tiny sewing needle and then slowly suck the egg out. I guess that keeps kids from being grossed out by the look or texture of the raw egg? 

 This receipe is definitely not as colorful as that one, but it’s way tastier and I think you’ll love it just a little more! It’s tastes like a delicious meal replacement smoothie without the heaviness of it, it goes down smooth and the vitamix pulverizes any texture the eggs and cacao nibs might once have had so it’s all homogenous in texture and delicious. You get your healthy protein and fats in perfect ratio from the eggs plus the added good fats from coconut oil and almond butter will give you extra energy. Cacao will give your body a healthy tiny amount of caffeine boost too 😉 

Additional Ingredients 

  • 1 cup Cold coffee
  • 1/4 tsp Cinnamon power
  • 1 tsp Acai berries
  • 4 Dates
  • 1 tbsp Maca powder

I have no doubt adding these ingredients will taste great and come in handy if you want to increase the serving size of your eggs’n’coco smoothie or want to add an extra boost of mineral and vitamin rich sweetness or a touch more caffeine kick. After all it is a breakfast smoothie. And what’s breakfast without a cup of coffee?

Breakfast of Champions- 3 Quick & Easy Organic Meals To Start Your Day For Success

Grandma was right… breakfast is the most important meal of the day!  If you’re skipping breakfast, you’re shortchanging yourself, and setting yourself up for a mid morning crash.  It seems simpler to opt for sugary breakfast cereals, pastries, or a quick cup of coffee on the run.  The mornings are a crazy time and it’s easier to grab and gulp.  But what’s the real cost of skipping breakfast?

For starters, breakfast sets the tone for your whole day.  Before I started eating right my favorite breakfast was cereal with regular milk.  Other days, I wouldn’t eat at all, or I’d grab a granola bar or banana out the door.  The result: my energy dropped, and I could barely keep my eyes open past 2 p.m.

So what foods set the tone for a successful day?  By successful, I mean you are at your personal best.  Your focus is clear, your memory sharp, and your brain is “ON”!  You don’t feel sleepy mid day, and you feel as bright as you did in the morning. A good night’s sleep the night before will certainly help with this, but you need to add fuel to the fire with a great breakfast.

A great breakfast consists of high protein and high fat.  The protein is fuel for your mind & muscles, and the fat will keep you satiated until it’s time to eat again, and keep blood sugar levels steady. 

I heard Jordan Rubin say that his breakfast of champions consists of 3 over easy eggs cooked in coconut oil, accompanied with toasted sprouted bread slathered with raw butter and coconut oil. Now that’s setting yourself up for success, because you’ll be going hard until lunchtime with that meal. 

Here’s a few other breakfast menus that would make their way into the Champion Hall of Fame:

1) Follow in Jordan Rubin’s footsteps and go for the over easy egg.  Accompany this with a glass of raw milk, raw kefir, or other fermented dairy, 1 tbsp of coconut oil, and you’ll be flying out the door.  Total preparation time for 2 over easy eggs: 5 minutes.  Seriously, they almost cook themselves. Over easy eggs are my personal favorite, and I especially love eating them with grated raw cheese, or diced green onion and some sun dried tomatoes.

Here’s what you do: Make sure your pan is clean the night before, walk to the kitchen, turn it on and melt your oil of choice ( organic butter or organic coconut oil) and crack the eggs in the pan.  Then walk away and get your fermented dairy and take your coconut oil, your multivitamin, etc…  Flip the eggs, put some bread in the toaster, and you’re done!  Won’t take you more than 7-8 minutes to eat.  

2) Breakfast of Champions Smoothie or Juice

This is for all of you who don’t do the Edible Egg, for your own reasons. I do hope I can change your mind.  Eggs contain all known nutrients except for Vitamin C. They are a powerhouse of balanced nutrients!  They are chock full of protein, lutein, and choline. But, nonetheless, if you say you don’t have time for a hot breakfast, I promise you have time for a smoothie or a fresh juice.  Smoothie– Combine 8 oz. raw milk or coconut water, 1 tbsp. coconut oil, 1/4 cup frozen or fresh organic fruit, 1 frozen or fresh organic banana and 2 tbsp of raw nut butter and blend well in a high speed blender or VitaMix. Fresh Juice– use a whole beet with stem, 5 carrots, 2 apples, and a handful of spinach. Then add 1tbsp of flax-seed oil or norwegian cod liver oil and blend well with a spoon. That’s it- breakfast in less than 3 minutes!  Drink it in the car if you have to! Get more juice recipes here.

3) Soaked Oatmeal With Coconut Oil & Raisins

This is the breakfast for the grain-inclined.  Forego processed cereals and make your own oatmeal!  Got this recipe from Nourishing Traditions cookbook – Here’s what you do: 12-24 hours before you want to eat (this only takes 2 minutes!) combine 1 cup of organic old-fashioned oats in a bowl, and cover with 1 cup filtered or spring water, and 1 tbsp whey, yogurt or lemon juice.  The morning you want to serve, add 1 cup more water, 1/2 teaspoon sea salt, 1/2 teaspoon organic cinnamon, a dash of vanilla, a sprinkle of nutmeg, 2 tablespoons of coconut oil and bring to a boil.  Simmer until oatmeal is desired consistency usually takes 10 minutes or less.  When it’s done, add raw honey, at least 1 tablespoon coconut oil, and raisins to taste.  Stir well.  You can also add coconut milk or cream, and you can also cook the oats in milk instead of water. Also you can add a beaten egg to the mixture while it’s cooking for added protein.

So there you have it- three quick and easy meals to start your day off right.  No more excuses for skipping breakfast!
