Basic Breakfast Revamped!

I just had such a delicious breakfast today! I wanted to share the recipe for this power breakfast with you guys because everyone needs some inspiration sometimes!

This is based on the Power Breakfast article I wrote a few weeks ago, but I’m adding some yummy things to it.

Heat up your oven to 450. Cut up a small potato and season it with coconut oil and herbs (rosemary, basil, etc..) and place it in an oven safe dish or pan, and heat for 30-40 min until cooked all the way through.

15 minutes later, (the perfect amount of time to get the table ready, get dressed, etc…) while the oven is cooking your potatoes, cut up a brown button mushroom into slices and add to another pan with a little coconut oil and start heating it up on medium, then add half a sliced green onion and a pinch of cumin powder. Heat up for another minute then crack two free range organic eggs on top, and add the other half of the green onion. If you have sun-dried tomatoes in oil, add three or four of those (sliced into smaller pieces), and put the lid on the pan, heating up for a few minutes more until the desired hardness of yolk is achieved. I’m a fan of dipping bread into my yolks, so mine is always soft and runny!! When you take them out of the pan, lift them gently so you don’t ruin the shape, and add a few tiny slices of raw organic cheddar cheese to the eggs, and cover with a lid on your plate. The cheese will start to melt over the eggs, and that  tastes ammmmazing!!

Using coconut oil, because it can sustain higher frying temperatures than olive oil and is therefore way healthier for you and not carcinogenic, fry up some organic free range turkey bacon! Yum! Frying bacon is always pretty fast, so once it’s done put it in a bowl and cover it with a lid or another dish to keep it warm. Then heat up some hot water for tea.

This should bring you to the last few minutes of oven time before the potatoes are done. Place one or two slices of whole grain sprouted bread in there and heat them up, brushing them lightly with coconut oil so they don’t get dry and hard, but remain soft.

Then take everything out, and enjoy!

You will have the most delicious homemade power breakfast: herbed baked potatoes, eggs with green onion, sun-dried tomatoes, mushroom and melted raw cheddar cheese, a side of turkey bacon, and  a piece of toast for jam or dipping into the egg, with a nice hot cup of tea =)
